Here’s a hearty salad for you, from the Landes region of France, in the southwest, close to the Spanish border.

Salade Landaise (Paris)

While I won’t give you the complete recipe here, I will tell you it includes

• A duck drumstick
• Duck gizzards
• A slice of foie gras
• Strips of dried ham

And lots of “nom nom”.
