Jérôme has sent us a photo of a dessert he enjoyed in a Parisian restaurant. It’s braised pineapple with vanilla ice cream and he assured me it’s as good as it tastes.
My favorite French desert, the Île Flottante (or “Floating Island”) is made with whisked egg whites covered with caramel sauce served chilled on Crème Anglaise (think liquid custard).

Nom nom nom! Oh wow, braised pineapple sounds terrific!! And the île flottante looks like an edible cloud of goodness! It’s made of egg whites, isn’t it? On crème anglaise? Oh the French do have desserts down, I must say.
Alas, no “cheesecake” for this Thursday, though!!
